QUICK REFERANCE GUIDE

to assist you in getting to know the flavor profiles of these BIG WINES

Winery owner Claire Silver's FOOD RECOMMENDATIONS
follow the wine Varietals.

ZINFANDEL

Tobin James Cellars is famous for their spectacular Zinfandels. They create as many as 11 different Zins a year, all uniquely and incredibly wonderful. They are all deep, intense in color, have rich fruit and berry aromas with dense, rich, concentrated jammy, packed with fruit flavor profiles. All exhibit long lasting finishes.

The “ultimate Zin” is their “Blue Moon”,
it has the most concentration and is the jammiest of any Zinfandel.

Claire recommends:

  • CHEESE
    Provolone, Cheddar, Muenster
  • FOODS
BBQ, "not too hot or spicy, though"
    Pizza
    Pastas in tomato sauces,
    Full-rich flavored food dishes
    and all meats

CABERNET SAUGIVNON

Tobin's Cabs are packed with currant, wild berry and cherry flavors, with hints of herb and oak. They are soft, ripe and ready to drink Classic Cabs. The supple, polished and harmonious complexities make them perfect food friendly wines.

Claire recommends:

  • CHEESE
    Danish Blue, Camembert, Hard Cheddars
  • FOODS
Very versitile wine with food pairings
    Prime Beef
    Steaks, beef, lamb, or pork
    Rack of Lamb
Rich stews, and heavier, richer foods dishes
    rich full-flavored vegetarian dishes

MERLOT

The characteristics that make Merlot such a popular wine, bright black cherry flavors, currant and plum with a luscious mouth feel and soft velvety texture, are all found in Tobin's Merlot. It is one of their most popular wines.

A rich and brilliant one is “Made in the Shade” Merlot.

Claire recommends:

  • CHEESE
Manchego, hard cheddars, Brie or Camembert
  • FOODS "Goes with most foods - especially meats and not too spicy dishes"
    Braised Beef or Lamb
Heavier sauces on chicken, duck, pork,
    Heavier vegetarian dishes
    Portobello mushrooms

SYRAH

Paso Robles is quickly becoming known as one of the best areas in the world for Syrah and Tobin James is, in our opinion, one of the “best of class”.

Typically they have bright cherry and berry flavors, matched with just the right touch of pepper and spice. They finish with soft tannins that allow their Syrahs
to be enjoyed young, or aged for many years.

Claire recommends:

  • CHEESE
    Smoked Gouda, Mimolette
  • FOODS
    Lamb
Game - such as venison, wild boar, duck or pheasant
Savory braised beef dishes and stews
    Sausages
    Chicken in heavier, full-flavored sauces
    Heavy pastas and risottos

CHARDONNAY

The Chardonnay from Tobin surprises many wine aficionados with its wonderfully different and refreshing flavors of citrus, pineapple and pear flavors
with hints of apple and slight vanilla oak.
This wine is a real crowd pleaser.

Claire recommends:

  • CHEESE
    Brie, Gruyere, Mild Blues
  • FOODS
    Tropical flavored sauces
    Seafood
    Mild Vegtable dishes
    Seafood or Chicken Curries
Chicken in wine sauces... made with "Radiance", of course!

SAUVIGNON BLANC

When visiting the winery you will notice that Lance Silver (owner of the winery) always starts his evening with this wine, it is his personal favorite. It is firm, well-bodied, exhibiting wonderful grapefruit, lemon, lime and citrus flavors.
The finish lingers through crisp acidity with a mouth watering finale.

Claire recommends:

  • CHEESE
Sonoma Jack, Mild Goat Chesses, Soft Neufchatel
  • FOODS
    Citrusy Seafood dishes
    Mild fishes
    Vegetarian dishes
    Salads
Pastas with goat cheese, lemon olive oil, basil and fresh tomato

LIQUID LOVE
a late harvest dessert Zinfandel

This wine comes with the disclaimer:

“Beware! We take no responsibility for what happens once this bottle is uncorked!”

Deep, rich, and jammed with flavors, this complex dessert wine is the perfect end to an evening. It displays rich currant and plum flavors with hints of herb. Picking very late in the season produces an almost port-like wine.
It must be tasted to be believed.

Claire recommends:

  • CHEESE
    Triple Creme Bries, Camembert,
  • FOODS
Chocolate is a food group, isn't it?
    Desserts - followed by Chocolate
Rich Fruit sauces over French Vanilla gelate or ice creme

DREAM WEAVER
Sparkling Wine

This “California Champagne” is packed with pear and apple flavors
and just a hint of sweetness. This Sparkler is sure to appeal to almost everyone.
It is perfect picnic or brunch wine, great with cheese or fruit,
and is absolutely best out of the bellybutton.

Claire recommends:

  • CHEESE
    Brie, Mild Swiss, Camembert
  • FOODS
    Fruits
    Appetizers
    Spicy Thai Food
    Sushi
Salads - not too vinegary, though
